With mercury needle hitting new heights in the last few days, I thought pickled vegetables and fruits would be just the food that would get people into a good appetite. it is not only healthy, and it is so simple to make. So, here's the recipe for Macerated Tomatoes.
Macerated Tomatoes

Ingredients
Heirloom Tomatoes | 250g |
Balsamic Vinegar | 3 tbsp |
Virgin Olive Oil | 3 tbsp |
Shallots | 2 |
Garlic | 2 cloves |
Spring onion | 1 stalk |
Basil leaves | 1 handful |
Coriander | 1 handful |
Sugar | 1/2 tsp |
Mini Mozzarella Balls | |
Cayenne Pepper, Salt & Pepper to taste. | |
Method
Mince shallots, garlic, spring onion, basil leaves and coriander.
Add balsamic vinegar, olive oil and sugar.
Add cayenne pepper, salt and pepper to taste.
Pour into the tomatoes (halved). Put all into a glass contained, sealed tight and let it sit for at least 2 hours to maximum 8 hours.
Served with mini mozzarella balls. Garnish with basil leaves and some sliced mini radish.
